Recipe: Braised Lamb Shank

Braised Lamb Shank

4 each lamb shanks

3 cups beef broth

7 cups fresh tomato sauce

1/2 Spanish Onion pique  ( studded with cloves)

2 whole cinnamon sticks

9 cloves

salt and pepper to taste

500 g orzo

1/4 cup evoo

Drizzle lamb shanks with evoo and season with salt and pepper

sear on all sides till nicely caramelized (approx. 5 min each side)

place in a hotel pan or in crock pot

while searing place the beef broth, tomato sauce and onion pique s & p in a pot and bring to a simmer

once lamb shank are caramelized top with tomato sauce and cover with plastic wrap and foil and place in 325 degree pre heated oven for three hours or until fork tender

once done adjust seasoning with s & p

If cooking in crock pot time may vary

for orzo

bring a pot of salted water to a boil add orzo and boil till aldente

to serve

mix some sauce with orzo place on platter top with sauce and top with grated kefalotyri cheese
