Münich Rouladen

Ingredients

· 6 oz. Beef Chuck Roll, 2 pieces

· 2 carrot pieces, Julian cut

· .5 oz. onions

· .5 oz. dill pickles

· .5 oz. fresh mushrooms

· 2 slices Applewood Smoked Bacon, uncooked

· 2 tbsp. German mustard

· 1 tsp. salt & pepper

· 2 cups flour

· 1 tsp. parsley

· 1 skewer

Cook

· All vegetables should be cut Julian style

· Pound out meat & season with salt & pepper on both sides

· Spread German mustard onto meat

· Layer cut carrots, onions, pickles, and mushrooms onto meat

· Roll up meat in uncooked bacon slices

· Stick in skewer to keep meat roll together

· Flower the roll on both sides

· Pan sear roll, slow cook in beef jiu for 1 half hour at 325 degrees or until fully cooked

· Once meat is finished cooking, remove skewer

· Garnish with parsley and serve with Spatzle

Cabbage Rolls

Ingredients

· 4 leaves of cabbage

· 1 lb. ground beef

· 1 medium-sized carrot

· 1 medium-sized onion

· 2 tsp. salt & pepper

· 1 tbsp. sugar

· 2 cups tomato sauce

· 1 cup rice

· 1 tsp. parsley

· 1 tbsp. sour cream

Prep

· Poach cabbage leaves for 3-4 minutes

· Peel and shred carrots

· Dice onions

· Combine carrots & onions together, and sautée

· Cook rice

· Mix together raw beef, carrots, onions, rice, salt & pepper

· Stuff 2 tbsp. mixture into each cabbage leaf

· Put in nongrease pan

· Cover with cups of tomato sauce

· Sprinkle the sauce with sugar

· Cover with foil, and bake for 1 hour & 25 minutes at 325 degrees or until fully cooked

· Garnish with parsley and sour cream

Serve with Mashed potatoes
