Jicama Slaw Recipe

1ea. Julienne red bell pepper

1ea. Julienne orange bell pepper

1ea. Medium size jicama julienned

1ea. Gourmet cucumber julienned

2 Tbs. Dijon mustard

1/4 C. Rice vinegar

3 Tbs. sugar

1 C. Olive oil

Salt & Pepper to taste

First julienne all your veggies place in a mixing bowl set aside. Next in a separate bowl whisk Dijon, vinegar & sugar together then slowly add olive oil till blended. Salt & pepper to taste. Finally add the vinaigrette to your slaw mixture. Place in the refrigerator for an hour to chill.

Grilled Thai Salmon

1- 6oz. Salmon portion skinless

1- sweet thai chili sauce (from your local grocery store)

Heat a ridged grill pan or a barbecue grill. Coat the grill or pan with cooking spray. Grill the salmon. Cook for 10 to 15 minutes, turning once, until cooked through; use a sharp knife to check for doneness. When done drizzle the salmon with a sweet thai chili sauce. Serve with your jicama slaw.
