Lago's Sautéed Calamari

Makes 8 ounces

Cut & rinse squid thoroughly - strain

In a separate bowl or pan, add your squid Then Add:

Salt well - 2 tablespoons evenly

Pepper - couple pinches

Unsalted butter - tablespoon

Quartered Oven Roasted Tomato - 1 tomato Red pepper flake - pinch Chopped Garlic - teaspoon

3 herbs - parsley, chives & basil

Start a tablespoon of blended oil in a sauté pan on high heat - wait one minute than add your squid mix

Continue mixing squid for 3 min in sauté pan on high heat

Add a cup of white wine to reduce temperature & continue reducing white wine for another 3 min.

Add 3 oz of marinara at the end to finish off. Pull your squid off the heat as soon as the squid turns from translucent to opaque.
