Chitarra Pasta Recipe
Yields 10 lbs pasta dough

• 8 lbs Semolina flour

• 1 qt water

Purchase and prep

• Place ingredients in pasta mixer

• Mix for 20 minutes until dough is fully hydrated.

• Extrude pasta using chitarra attachment.

• Cut pasta in brunoises (1/8 inch squared)
