Cleveland Cooks: Biga Pizza Recipe


10oz water

10oz starter or I packet yeast

15oz flour

12 grams salt

Combine starter and water, mix slowly to break up starter

Add flour and salt

Mix 12 minutes speed 2.

Let rest 15 minutes then cut and scale to 10 oz dough balls. Let dough balls rest until double in size.

Spin out to 12 inches

Makes 4 dough balls

Pizza Rustica

1 dough ball

1 clove garlic chopped

1 tablespoon olive oil

4 oz roasted artichoke hearts

1 oz clalmata olives pitted

2 oz sliced red onion

3 oz fresh mozzarella

Fresh oregano

Sea Salt

Spin out dough ball to 12 inches

Add oil, garlic and oregano.

Add art hearts, olives and onions.

Place on cheese

Bake in your home oven at 500 degrees for about 6 minutes

When finished add sea salt and some additional fresh herb.
