Recipe: Cleveland Pickle's Asian Pork Meatballs

Ingredients needed:

15 lbs. ground pork

9 eggs

4-5 large carrots, rough chop 1 inch cubes

1 cup basil

¾ cups garlic

6 large jalapenos, cut in half, seeds and all

1 bunch scallion, cut in fourths

½ cup fish sauce

3/4 cup hoisin

¾ Cup Sriracha 

1 cup sesame oil

3-5 cups panko (until firm enough to roll)

Supplies needed:

Large metal bowl

Large sheet trays lined with parchment paper

Gloves

Small ice-cream scoop

Large chef's knife

Measuring cups

Puree all vegetables in food processor until smooth.

In a large metal bowl, add vegetables, remaining ingredients and mix thoroughly. Parchment lined tray, small ice cream scooper, roll in hand to finish. Drizzle with sesame oil and bake at 350 for 25-30 minutes until medium brown.

Grill any type of sub bun, cut down the center and create a pocket. Place desired amount of meatballs on bread. Add 4 ounces of meatball sauce (whole peeled tomatoes, hoisin, chilis in adobo puree, salt and pepper, pureed in blender and cooked down) over meatballs. Add spicy mayo, fresh carrot threads, pickled veggies, cilantro, lime juice. Serve and enjoy!

*Make sure that the mixture gets cooked the same day that it’s made. Also, please pay attention to cross-contamination. Since you're working with raw meat, wash all surfaces when done.
