Recipe: Bar Cento's Sunnyside Pizza

Menu description: provolone, housemade pancetta, blue loon farm eggs, black pepper 

Ingredients:

2 1/4 cup flour

3/4 tsp salt

3 tbsp extra virgin olive oil

1 tsp sugar

1 package dry active yeast

3/4 cup warm water

3 large eggs

5 slices of pancetta

5 oz provolone

2 oz black pepper

parmesan cheese to garish

olive oil to garnish

Instructions: 

Combine water, sugar, and yeast. Set aside. 

Combine flour, salt, and olive oil. 

Once the yeast is activated, add the water mixture to the flour, salt and olive oil. Mix together until incorporated. 

Cover in an oiled container, wrapped at room temperature. 

Once the dough rises, stretch out. 

Sprinkle black pepper over the dough. 

Cover evenly with provolone

Place pancetta in a circle, and "Y" shape, evenly dividing the circle in 3 

Within those sections, create an indent

Crack eggs. Place 1 in each indent

Cook at 450 degrees fahrenheit for roughly 10 minutes or until eggs are over easy and dough is crisp

Sprinkle with parmesan cheese

Drizzle olive oil around the crust

Pour yourself your favorite beer, and enjoy!
