Ingredients:

Pork Shoulder, cut into strips 18 lbs

Beef, cut into strips 10 lbs

Fat Back, cut into strips 8 lbs.

Ice 6 lbs.

Pork Seasoning:

Salt 1 ½ C

Dextrose 1T

Beef Seasoning:

Ground Black Pepper 71 g

Salt 1 ½ C

Granulated Garlic 1t

Dextrose 1T

Dry Milk Powder 2 C

Preparation:

Mix Pork with Pork Seasoning.

Mix Beef and Fat Back with Ice and Beef Seasoning.

Grind Pork with large plate.

Grind Beef, Fat, Ice with small plate.

Mix all in mixer with dry milk powder.

Case using hog casings and medium tube.

Hang overnight.

Poach to internal temp of 150.
