-smoked turkey legs

-shredded green & purple cabbage

-Tuscan rye (or regular rye bread)



-sweet chili sauce

-Creole season

-red wine vinegar

*Cover smoked turkey legs in large pot with water, bring to running boil then turn down to medium heat and simmer for 2 hours. Remove cooled meat from bones also removing skin and ligaments. For remoulade, mix 2 cups mayo with 1 cup sweet chili sauce and add 1 tablespoon of Creole season, blend together with spoon or whisk then refrigerate. For assembly- on medium hit griddle butter toast 2 rye bread slices, add swiss to one slice, add remoulade to second slice, add smoked turkey to the griddle with a tab of water to steam meat and enhance moistness. Add 3 oz of cabbage to grill, add 1 tablespoon of red wine vinegar to cabbage and saute for 2 minutes. Add meat to toasted swiss cheese slice of rye and top with sauteed cabbage. Top sandwich with toasted remoulade slice (sandwich should have golden brown crust. Remove from griddle and slice diagonally in half.

-kaiser bun

-shredded green & purple cabbage

-sweet onion vinaigrette dressing

*Take chicken cutlet and dredge into seasoned flour, dredge chicken into buttermilk, dredge chicken in seasoned flour also pressing for expansion, fry battered chicken at 350 degree oil for 7 minutes or crispy golden brown. For vinaigrette add to bowl 2 cups honey mustard, 2 oz finely diced onions, half a cup of sweet white wine, salt and pepper, 3/4 cup of oil, whisk together, refrigerate. For assembly- Toast kaiser bun with butter, dip chicken into BBQ sauce, add 1 oz of sweet onion vinaigrette to 4 oz of slaw and toss together, add BBQ dipped chicken to bottom toasted bun, top with sweet onion slaw, add top toasted bun.
