Okay, grab a 14 pound bird, baby.
1 stick unsalted butter (melted)
1 head garlic
Several sprigs of fresh thyme
Salt and pepper
Set the turkey on a board and remove all the gross stuff (you know what I mean).
Put a half a lemon, the garlic head, thyme and generously sprinkle salt and fresh ground pepper into the cavity of the Turkey. [See Paul Joncich's recipe for stuffing]
On the outside...brush the melted butter generously around the skin and season with more salt and pepper, and cayenne pepper
Preheat the oven to 500 degrees and on the lowest level of the oven uncovered put the turkey in the oven for 30 minutes.
After 30 minutes...reduce the heat to 350 and roast for another 2-21/2 hours covered
The turkey should be taken out when the internal temperature is 160 degrees. Let the turkey rest covered for about 15 minutes.
