BLT, Bacon, Lamb & Tomato

"BLT"  Bacon, Lamb, and Tomato

4 double lamb chops

4 strips bacon

1 large tomato diced

2t.  chopped oregano

2t. chopped parsley

1 shallot minced

2 T extra virgin olive oil

Method:

Wrap the bacon around the outside of the lamb chops.  Tie with a string tightly.

Season the chops and grill to desired temperature.  In a small bowl combine the tomatoes, shallots, herbs and olive oil.  Season with salt and pepper.

Place the chop in the center of the plate.  Spoon the tomato salad on top.
