Each week Jen Picciano, of Cleveland Cooks, is joined by David Kocab, Chef de Cuisine at The Black Pig, and Chef Matt Mytro, Chef/Partner at Flour, as the trio discussing the local dining scene, tips for the home cook, and industry issues.
This week’s episode will feature special guest Brian Evans.
He is a chef and baker at On the Rise Artisan Bakery in Cleveland Heights.
Evans brings with him a knowledge of all kinds of breads and pastries, but he’s especially excited about their holiday specialty, a Buche de Noel.
They’ve also recently developed a recipe for a salted chocolate rye cookie, made with whole grain rye from Stutzman Farms.
Evans will share and discuss the recipes and methods for making some of their other popular cookie varieties, like the new millionaire bar, a shortbread crust with caramel, chocolate and sea salt, and their cranberry pistachio biscotti.
