Cleveland Cooks: Vegan Naan from Toast Cleveland

Vegan Naan

Yields 8 Servings

For Dough:

1 C warm water

3 oz (by weight) dry active yeast

1 T salt

1 T garlic powder

1 T Greek oregano

2 tsp sugar

5 T coconut milk

2.5 C AP flour

2 T olive oil

· In a medium mixing bowl, combine the warm water and yeast and let sit in a warm area for about ten minutes (or until bubbles start to form)

· Next add all of our seasonings and coconut milk, stirring with a whisk while doing so.

· Once all of those items are fully incorporated together, we will slowly add the flour, while stirring with a wooden spoon

· When you get to the point where stirring becomes difficult, roll your sleaves up and get your hands in there! Start kneading the dough, until ingredients form a ball and dough becomes elastic.

· Then we will transfer dough into a clean medium sized bowl, rub our olive oil on it, and cover with a damp cloth

· Let dough rest for 15 minutes in a warm area so that it may proof, then flour a cutting board and roll out until ¼ inch thick

· Grill on each side until preferred doneness.

For Curried Squash Puree:

½ of a medium butternut squash, peeled and small cubed

2 T yellow curry paste or powder

1 11oz can coconut milk

1 T salt

1 sprig sage

2 T olive oil

· First we are going to heat a sauce pot over medium heat, add our olive oil, sage, and squash

· Let the squash sweat out while stirring every few minutes, until the squash begins to get a light golden color, and starts to feel soft

· Then add the salt, curry, and coconut milk

· Let stew down until squash begins to fall apart

· Puree in food processor or blender

Spiced Apples:

2 of your favorite baking apples (cored and sliced)

1 tsp coriander

1 tsp oregano

1 tsp salt

1 tsp red chili flake

3 T olive oil

· Place a large sauté pan on the stove, over medium heat, and add oil

· Let heat up, then add apples and seasonings

· Gently stir apples so that all spices are evenly distributed

· Let cook for 4-5 minutes, or until apples begin to soften

To assemble:

Use a spoon to spread on squash puree (use as much or as little as you would liked), then add the apples and some sage if you prefer. Place in a 450 degree oven for 6-8 minutes, slice and enjoy!
