Each week, Cleveland 19's Jen Picciano, host of Cleveland Cooks, is joined by Chef Matt Mytro of Flour in Moreland Hills and Flour Pasta Company and Chef David Kocab of The Black Pig in Cleveland's Ohio City neighborhood.
On this episode, the Taste Buds will discuss the current state of the West Side Market, its role in the city as a functioning market and a tourist attraction, and plans for the future.
The trio will also discuss the issue of bread service in the restaurant industry. Should bread be offered for free at restaurants? If not, how much would you be willing to pay for bread before your meal when you sit down at a restaurant? Some restaurants, are now charging for bread service, while others continue to provide bread for free. However, there is a significant cost associated with restaurants' bread programs.
"Our total cost is equal to an employee's salary," said Mytro about their focaccia bread that is served with meals, at no charge.
