Aunt Margie's Pumpkin Pasta With Creme Sauce


3 Cups All-Purpose Flour
Dash Of Salt
2 Extra Large Eggs (at room temperature)
1/2 Cup Pumpkin Puree
Dash Of Nutmeg

2 Cups Heavy Cream
1/2 Cups Mixed Chopped Fresh Herbs (Basil, Chives, Parsley, Oregano and Thyme are good choices)
Salt & Pepper
1 Cup Grated Fresh Parmesan Romano or Asiago Cheese

To make the pasta, combine the flour in a mound on a large board. Create a hole in the center and add the eggs, pumpkin and salt. Using a fork, mix the wet ingredients until combined, and then slowly mix in the flour until you have a workable dough. Knead for a few minutes until smooth.

To make the sauce, heat the cream in a medium saucepan over medium heat. Add the chopped herbs and cook until the sauce has thickened and is reduced by one third. Add half the cheese and season with salt and pepper to taste. Cook the pasta al dente, and drain. Toss with the herb sauce and serve, offering additional cheese at the table.
