Cleveland Cooks: Reilly's Irish Bakery Irish Soda Bread
CLEVELAND, Ohio (WOIO) -It’s time to celebrate St. Patrick’s Day with Reilly’s Irish Bakery. The family-owned business has locations in both Fairview Park and the West Side Market. They prepare roughly one thousand loaves of Irish Soda Bread for customers to celebrate the holiday. Owner Ronnie Isabella shared her recipe for the Irish favorite for this week’s Cleveland Cooks.
3 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 tablespoons butter
1 egg
1 3/4 cups buttermilk
1 cup raisins (optional)
Preheat the oven to 425 degrees. Mix together the flour salt and baking soda in a large bowl. Add the butter and rub into the flour mixture until it resembles coarse bread crumbs. Stir in the raisins. In a separate bowl, whisk the egg and buttermilk together. Pour wet mixture into dry mixture. Bring the mixture together to form a loose dough. Turn mixture into floured surface and gently bring dough together into a ball. Place on baking sheet and score the bread. Bake for 15 minutes at 425 degrees then turn oven down to 400 degrees and bake for an additional 30 minutes. Remove from baking sheet and let cool on a rack.
