Cleveland Cooks: Fried Green Tomatoes from Proof
CLEVELAND, Ohio (WOIO) - Proof recently moved from their original location in Tremont to a new, larger space in Ohio City.
It’s allowed the BBQ restaurant to expand their menu, to include new favorites like the fried green tomatoes.
Chef Brandon Lassiter showed us what makes theirs so tasty, including a couple of garnishes that take them over the top.
Fried Green Tomato
Ingredients:
4 Green Tomato, Sliced ¼ Inch
2 Cups AP Flour
6 Eggs, Whisked with 2 Oz Water
3 Cups Panko Bread Crumbs
Salt and Pepper to Taste
Procedure:
1. Prepare your breading station.
a. Season Flour to taste with Salt and Pepper and place in small mixing bowl.
b. Whisk together 6 eggs with 2 oz water and place in mixing bowl.
c. Season breadcrumbs to taste with Salt and Pepper. Mix in the chopped parsley
2. Bread the tomatoes with the following procedure:
a. Start by dipping tomato slices into the flour mixture. Shake off any excess flour until fully covered.
b. Take the floured tomato slices and dip into the egg mixture. Fully cover and shake off any excess.
c. Place the egg washed tomato slices into the bread crumbs and slightly push into the breadcrumb mixture to coat evenly
3. Once fully breaded Deep Fry or Pan Fry the slices in oil that is 350 F until they are Golden Brown,
Notes
These tomatoes can be topped with whatever your taste buds desire. There is no wrong answer.
Some notable topping/dips are Pimento Cheese, Bacon, Ranch Dressing, Remoulade, Chevre.
You can also substitute these tomatoes in dishes like Egg Benedict.
