Cleveland Cooks: Paloma

CLEVELAND, Ohio (WOIO) - It’s almost time to celebrate Cinco de Mayo. But there’s more to the cuisine associated with the holiday than margaritas. Paloma in The Van Aken District is elevating Tex-Mex food ahead of the holiday and all year long. Jen Picciano is back in the kitchen for Cleveland Cooks to prepare something from their new menu with Chef Zach Ladner.

The restaurant recently went through a bit of a transformation, and it looks and tastes a little different.

Tex-Mex food does not have to be casual, he says. It can be upscale and a little fancy.

Chef Ladner showed us how to make their Yucatan preparation of an Alaskan black cod,”Tikin Xic.” It’s grilled in banana leaves with annatto, pineapple, and orange, topped with fresh herbs, onion, and charred zucchini.
